Pork Belly Bahn Mi

Love and I were sitting at home craving a Bahn Mi and decided to give a go at making our own. I mean, how hard can it be! We headed out to our local market and picked up some fresh pork belly, veggies and couple fresh baked mini buns and headed back for our kitchen to make some magic.

Cast iron is one of my favorite cooking vessels and I own a few varieties of it. After marinating our pork belly and pickling our veggies we through a little oil on the grill and cooked to pork belly to juicy perfection. While it was grilling I was cutting the loaf and prepping the plates for the amazing sandwich that would come. All assembled we had a magic delivery of goodness and some more pork belly left over for other goodies to come.
